Can the default access code be changed via the keypad from 1234 without a SIM card installed? If not then can it all be installed set up and working and a SIM card fitted at a later date?

The system to does not require a SIM card to function. The purpose of the SIM is for the notifications to your phone. You can set and re-set you access code as often as required via the keypad.
How would I know which sim to buy for this product? Would it just be any standard sim from O2 or EE? What sort of air plan would you need just calls only for a very low price per month? Or is there a minimum air time usage you would need for this?

Any pay as you go sim would be fine (excluding the network Three) dependant on if you wanted to be contacted by a call or text, the data plan and network would be your choice.
Does this system allow for existing wired PIRs to be used? If not, do you recommend an alternative wired/wireless system?

Unfortunately our Alarm Systems are all wireless and are not suitable to be wired as they work on their own secure frequency. They are also not compatible to work with other brands.
A couple of questions:
a) if the alarm goes off, is it possible to disarm it remotely using the mobile app?
b) is it possible to set the device so the alarm doesn't sound but you get a notification on the mobile app?

The alarm can be de-activated using the smart phone app. You could not connect the external siren to the alarm system thus removing the audible notification via this component and you would received a text notification of the alarm activation via the Sim card.
